It’s Friday!!! I love Fridays, there is something magical about the approach of a weekend, especially in the summer. It’s as if an endless plethora of fun and excitement are possible in the next couple of days and we are just on the cusp, totally savouring the anticipation of it. Even if I don’t have anything concrete planned, there is just so much possibility.
This has been a perfectly hot and wonderful week and I have been experimenting with various types of from scratch lemonades. My wrist is sore from all the lemons I have juiced, I think I need to find a better way to get the fresh juice out of those darn things if I’m going to do this all summer. I saw a gadget on Jillian Harris’s blog that I’m going to have to look for. That is also where I got the recipe for my coconut lemonade.
There were some fresh raspberries in my fridge early in the week that were a bit past their prime so they went into the Vitamix to become my raspberry lemonade, my favourite so far. After that the waning strawberries also got turned into a new creation, coconut strawberry lemonade, a definite winner. The possibilities are endless, I’ve got watermelon on my shopping list for today, who knows what else might inspire some other creation this weekend.
With the wonderful weather, I’m taking my workout outdoors. Every Saturday this summer I have an early morning bootcamp workout in the coulees. Coulees are essentially a narrow valley, so lots of hills that I’m sure will be encompassed into a fun, “total body, heart pumping, aerobic and strength conditioning workout” with one of my favourite instructors at Kinetic Cycle and Fitness, Chantelle Erickson. Not only will the workout help get my body into tip top shape, I’m sure there will be endorphins flowing aplenty to make me feel great the rest of the day. Seriously, take your workout outside when you can, there are so many benefits. Being closer to nature, sunshine, fresh air, even the unevenness of the ground makes for a better workout.
I have no idea what other activities I’ll be doing, but you can bet as many of them as possible will be outside. What are your favourite weekend activities? 1lb clamshell container of strawberries
¾ cup sugar
Approximately 6 cups water
Remove juice from lemons and pour into a large pitcher. Cut tops off strawberries and wash, then put into *Vitamix blender with sugar, lemon juice, and water as required to taste. Personally, I prefer a tart lemonade, if you like it sweeter, add a bit more sugar. Chill and enjoy!
*If you don’t have a Vitamix or Blendtek blender, you may want to strain your strawberry puree to remove any seeds that weren’t completely pulverized (personal preference).
TIP: Add ½ to ¾ can of coconut cream to recipe if you want to turn it into Coconut Strawberry Lemonade. (Coconut milk won’t work, not enough coconut flavor: I tried☹).
You might notice the glass isn’t quite full in some of the pictures, I got really thirsty!
